This job involves leading a team of prisoner workers in a prison kitchen to prepare and serve meals for about 550 inmates and 30 staff members each day, while maintaining security and ensuring special diets are handled correctly.
It requires overseeing food production, baking, and portion control in a high-security environment.
A good fit would be someone with experience in large-scale food service who can handle leadership, safety protocols, and working in a correctional setting.

Facilities 30 Second Cut
Leads prisoner kitchen workers in the preparation and production of meals for approximately 550 prisoners and 30 staff per meal at Spring Creek Correctional Center in the APS main kitchen.
Maintains security and control of prisoners in the absence of Correctional Officer staff.
Ensures meat pulls are consistent with prepared menu, oversees actual preparation and serving of food to inmates and staff.
Ensures that all modified diets are properly prepared for each meal, which includes, but is not limited to, vegetarian, diabetic, allergy, disruptive inmate diets, religious diets, and other diets as prescribed by the Medical Department.
Ensures the proper baking and preparation of all breads and pastry items, e.g., sandwich, hot dog buns, hamburger buns, French bread, wheat, rye breads, cakes, pies, cookies, pudding and breakfast pastries.

Please be aware – this position requires the use of the Alaska Public Safety Information Network (APSIN). A security clearance issued by the Department of Public Safety (DPS) is necessary to use APSIN.
DPS will deny security clearance for any applicant who has been convicted of a felony or misdemeanor in this state or another jurisdiction, or who may be a fugitive from justice.
Additionally, security clearance will be withdrawn if DPS discovers that material information was falsified or omitted at the time of the initial application for security clearance.
