Job Description

Summary

This job involves overseeing the daily operations of a food service facility, such as ordering ingredients, preparing and serving meals in large quantities, ensuring cleanliness, and managing a team of workers.

Key Requirements

  • One year of full-time experience as a Senior Food Service Cook with the County of Sacramento, or three years of full-time cooking experience in a commercial or institutional kitchen with at least one year leading employees
  • Knowledge of food safety practices including ServSafe and HACCP procedures
  • Experience supervising staff, including training, performance evaluation, and conflict resolution
  • Ability to prepare and serve large quantities of food with minimal waste, including recipe conversion and portion control
  • Familiarity with menu planning, special diets, and operation of commercial cooking equipment
  • Compliance with local, state, and federal food service regulations, plus maintaining personal hygiene and health standards
  • Basic computer skills for food service operations and effective communication in English

Under direction, supervises and is responsible for all daily operations of a food service facility; including food ordering, food storage, cooking, meal serving, and maintenance of sanitary conditions; supervises subordinate staff and/or institutional workers.

Requirements

Knowledge Of:

  • Principles and practices of effective employee supervision including leadership, motivation, development, team building, conflict resolution, performance evaluation, and discipline
  • Principles and methods of effective training
  • ServSafe and Hazard Analysis and Critical Control Point practices and procedures, including proper food safety, food handling, and sanitation procedures
  • Menu modifications for special diets
  • Formulas and methods of preparing and serving a variety of food in large quantities including recipe conversion and portion control
  • Principles of menu planning
  • Operation of commercial cooking equipment
  • Local, state and federal laws regarding food service operations in detention and/or commercial institutions


Ability To:

  • Supervise, plan and direct the work of others
  • Evaluate levels of achievement and performance
  • Train others in proper methods of food handling, food preparation and cooking techniques
  • Follow and/or adjust formulas for food preparation in large quantities
  • Order food and supplies in the right quantity to meet menu requirements
  • Plan and carry out the work of a given menu in such a manner as to produce the required food at the right time
  • Prepare quantities of food required with minimal waste
  • Read, write and speak English at a level necessary for satisfactory job performance
  • Comply with regulatory health and uniform standards
  • Maintain personal hygiene
  • Establish and maintain effective working relationships
  • Learn to use computer programs that are essential to the food service operation

Qualifications

Minimum Qualifications:


Either:1. One year of full-time paid experience employed by the County of Sacramento in the class of Senior Food Service Cook.


Or:2. Three years of full-time paid cooking experience in a commercial or institutional kitchen, including at least one year of experience directing and leading employees engaged in preparing and serving food.


Education Substitution: Education or training from an accredited college, training school, business school or occupational training program that is directly related to the cooking and/or food service program knowledge and abilities above may be substituted for up to one (1) year of the required experience in Pattern 2.

The basis for determining equivalency is: 30 semester units (45 quarter units) equal one year of experience.

Completion of training courses which do not have semester unit values are equated to semester units on the basis of: 15 clock hours of class equal one (1) semester unit.


General Qualifications

Criminal History and Background Checks: The County may access criminal history information on candidates who have accepted a conditional offer of appointment for the above class consistent with the provisions of Board of Supervisors Resolution No. 82-602, Personnel Policies and Procedure B-5 and applicable federal and state law. The County shall not consider for employment any candidate who has been convicted of a felony or misdemeanor that relates to or impacts the candidate's ability to perform the job duties of this class unless it is determined that mitigating circumstances exist. For purposes of accessing criminal history information, the candidate will be fingerprinted. A subsequent arrest notification may be obtained.

The County may also conduct a background check on the candidate prior to appointment to a position within this class. The background check may include personal and professional reference checks, credit history checks where authorized by Labor Code section 1024.5, Social Security Number verification, professional license/registration verification, military service information and driving history. Information obtained in the course of this background check will be considered by the appointing authority in the selection process. In obtaining such information, the County will comply with applicable consent and disclosure practices in the Fair Credit Reporting Act and the California Investigative Consumer Reporting Agencies Act.

License Requirement: A valid California Driver License, Class C or higher, may be required at the time of appointment. Failure to obtain or maintain the appropriate California Driver License may constitute cause for personnel action in accordance with Civil Service Rules or applicable bargaining agreement. Individuals who do not meet this requirement due to disability will be reviewed on a case-by-case basis.

ServSafe Certificate: All positions in this class are required to have a ServSafe Food Protection Manager certificate prior to appointment. Failure to maintain the appropriate certificates may constitute cause for personnel action in accordance with Civil Service Rules and/or applicable bargaining agreement.

Other Requirements: All positions in this class require tuberculin clearance.

Probationary Period
The probationary period for this classification is six (6) months.

  • FORMULA RATE EXAMINATION (Weighted 100%)


    All candidates meeting the minimum qualifications by the cut-off date will have their Supplemental Questionnaire scored in the Formula Rate Examination.

    This examination will evaluate the relevance, level, recency, progression and quality of candidate's education, training and experience.

    The candidate's application or other materials will not be included in this examination.

    Therefore, the candidate's responses to the supplemental questionnaire should be thorough, detailed and complete.

    The score from the Formula Rate Examination will determine the ranking on the eligible/employment list for this job.

    All candidates competing in the testing process will receive written notice of their examination results by email. Notices can also be accessed in their governmentjobs.com inbox.

    Applicants achieving a passing score will be placed on the eligible list in rank order. The rank is determined by the test score attained from the examination.
