Job Description

Summary

This job involves overseeing food preparation, serving meals, and managing sanitation in a prison kitchen, using recipes and schedules to ensure timely and safe production while supervising inmate workers.

It also requires maintaining security protocols to keep the environment safe for everyone involved.

A good fit would be someone with experience in large-scale cooking in settings like hospitals or institutions, who is organized, safety-conscious, and comfortable working in a secure facility.

Key Requirements

  • Two years of full-time experience in mass food production in commercial, military, hospital, or institutional settings
  • Equivalent combination of two years education (30 semester hours in dietetics, nutrition, or food management) and relevant experience
  • One year of full-time experience as a Cook 1, Cook 2, or Baker in the state executive branch
  • Ability to supervise and instruct offender workers in food production, service, and sanitation
  • Knowledge of security procedures including fire drills, key control, offender counts, and pat searches
  • Compliance with federal, state, and local food safety regulations and quality improvement principles
  • Obtain Commercial Driver’s License (CDL) and endorsements within a period after hire

Full Job Description

Shift open is 11am- 7pm Monday- Friday


Complete and supervise the completion of food preparation and preparation by utilizing pre-weighed ingredients, recipes and the daily production schedules, so that the food indicated on the menu are prepared in a timely manner by efficient utilization of offenders.

Assist in the preparation of medically ordered diets and special tray preparations.

For each meal, ensure that all foods produced, served and cleaned-up are in compliance with Iowa Medical and Classification Center policies and procedures; Dietary Services procedures; Federal, State and local regulations and continuous quality improvement principles.

Deliver hot/cold food transport carts to living units as assigned.

Other duties as assigned.

Use knowledge of security to ensure a safe environment for offenders, staff and the public by exhibiting a thorough knowledge of fire drills, disaster plans and disturbance control procedures; account for and appropriately lock all controlled items, including knives and utensils; keep doors secured; follow proper key control procedures; be alert to any security problems that might occur in Dietary Services; implement disciplinary action as disruption activities may dictate; complete daily offender counts; area searches, and complete clothed offender pat searches.


Instruct and direct offender workers in all phases of food production, service, ware-washing, and sanitation to ensure maximum productivity concerning dietary service operations.

Monitor their work habits; demonstrate correct food preparation; equipment use and sanitation methods; and modeling appropriate social and work behavior.

Monitor and document work habits and behavior for completion of work evaluations and job allowance calculations.

Qualifications

Applicants must meet at least one of the following minimum requirements to qualify for positions in this job classification:
  1. Two years of full-time work experience in mass food production in a commercial, military, hospital, or institutional food services setting.
  2. A total of two years of education and/or full-time experience (as described in number one), where thirty semester hours of accredited college or university coursework in dietetics, nutrition, food management or a closely related equals one year of full-time experience.
  3. Current, continuous experience in the state executive branch that includes one year of full-time work as a Cook 1, Cook 2, or Baker.

Additional Information
