The Riverside County Sheriff's Office seeks qualified individuals for the position of Correctional Cook to support their correctional facilities throughout Riverside County. As a Correctional Cook, you will work side by side with support staff of both Food Service Workers and volunteer inmates to prepare entire meals for one of our prison populations. $10,000 Hiring Bonus!
The bonus is $10,000 spread over 5 years.
$500 - Upon hiring
$500 - After 6 months (successful probation period)
$1000 - @ 12 months
$2,000 - @ 24 months
$2,000 - @36 months
$2,000 - @ 48 months
$2,000 - @ 60 months
All employees will be required to work a rotating shift. The shift rotations take place every 4 months and is on a 4/10 schedule.
Shift one: 3:30 AM -2:00 PM
Shift two: 6:00 AM - 4:30 PM

Requirements
• Prepare, cook and season soups, meats, fish, poultry, vegetables, desserts, and other foods; substitute meals when scheduled food supplies are not available; prepare special diet trays for youth or adult inmates with allergies or diet restrictions.
• Assist in inventory, ordering, receiving deliveries, checking, and storing foods and supplies.
• Direct food service workers or adult inmates in food preparation, serving and cleaning of kitchen facilities and equipment; maintain the security of the kitchen area and assist with training food service workers in the operation of equipment used in semi-skilled kitchen tasks.
• May perform meat cutting and baking duties.
• Prepare routine records and reports; will be required to work various shifts when other cooks are not available.
• May prepare and submit documented incident reports.
• Maintain constant control of kitchen utensils, tools and equipment for security purposes.
• Serve food to youth or adult inmates and staff; oversee the general cleanliness of the food service areas; maintain security and discipline in the food service areas.
• Determine quantities of food to prepare; cut and slice meats; cook and process food for serving; perform meat pull and proper thawing of meats.
• Assist in the preparation of menus, daily meal counts, transport records, and production records.
• Conduct daily inspections of the kitchen, food storage and dining areas to ensure cleanliness and security.
Qualifications
OPTION I
Experience: One year of large quantity cooking in an institutional, military, large commercial kitchen, or a similar setting which has developed skills in measuring and mixing ingredients according to recipes and number of persons to be served.
OPTION II
Experience: One year in food service work within a detention facility.
OPTION III
Experience: Two years in food service work in an institutional, military or large commercial kitchen, or a similar setting.
ALL OPTIONS
Knowledge of: The practices, methods and equipment used in preparing, cooking and serving food in large quantities; behavior of persons in detention facilities; sanitation methods in cleaning and caring for equipment; storing and inventorying large quantities of food; common weights and measures; occupational hazards and safety precautions of kitchen areas and equipment.
Ability to: Prepare, cook and coordinate cooking processes so that nutritional meals are prepared and served on time; guide and instruct adult inmates or food service workers in semi-skilled food preparation, service and cleaning tasks; read and understand recipes, labels and instructions for food preparation; perform basic mathematical operations to determine the proportions of ingredients with a minimum of waste; cut, slice and grind meat and poultry; follow oral and written directions; maintain personal cleanliness and neatness; maintain effective working relationships with and between employees, supervisors and managers; maintain effective security of kitchen equipment and utensils; prepare routine records and reports.
