Summary

This job involves preparing and cooking meals for patients and staff at a military hospital in Texas, including special diets and using various cooking techniques to ensure food is safe and tasty.

You'll also clean kitchen equipment and areas to keep everything sanitary.

About the Position: This position is located at Brooke Army Medical Center, in Fort Sam Houston, Texas.

Who May Apply: US Citizens Experience refers to paid and unpaid experience, including volunteer work done through National Service programs (e.g., Peace Corps, AmeriCorps) and other organizations (e.g., professional; philanthropic; religious; spiritual; community; student; social).

You will receive credit for all qualifying experience, including volunteer experience. There is no specific length of training or experience required.

However, you must be able to demonstrate, through experience shown in your written application materials that you possess the sufficient knowledge, skills, and abilities to successfully perform the work of this position without more than normal supervision.

Minimum Qualifications (Screen Out Element): Ability to do the work of a(n) Cook ~ without more than normal supervision. Can plan and cook entire meals, using a variety of cooking methods.

Can evaluate raw and cooked foods for freshness and doneness based on appearance, consistency, texture, and temperature. Can store food items in accordance with inventory and sanitation requirements.

Can operate, breakdown, and clean food service equipment, including but not limited to chillers, deep fat fryers, food processor, ovens, slicers, and steamers.

Work under supervision of a work leader or journey-level employee who observes tasks in progress and upon completion make sure they are properly performed.

Ability To Do The Work Of The Position Without More Than Normal Supervision Ability to Interpret Instructions, Specifications, etc.

(Other Than Blueprint Reading) Ability To Use and Maintain Tools and Equipment Dexterity and Safety Knowledge of Materials Technical Practices (theoretical, precise, artistic) Work Practices (Including Keeping Things Neat, Clean, and in Order) Physical Effort: Work requires continual standing and walking; and, frequent stooping, reaching, pushing, pulling and bending.

Frequently lifts and moves objects weighing up to 40 pounds unassisted. Occasionally lifts or moves objects weighing over 40 pounds, with assistance of lifting devices or other workers.

Working Conditions: Work is performed in kitchen areas that are well lighted, but often hot and noisy.

Employee is exposed to steam, fumes, and odors from cooking, and extreme temperature changes when entering and exiting walk-in refrigerators and freezers.

Employee is subject to slipping on wet floors that have been recently mopped, or where food has been spilled.

Employee is subject to possible cuts from knives and to burns from steam, hot foods, stoves, hot grease, and water.

Personal protective equipment must be worn during all times when employee is exposed to hazardous conditions. Major Duties:

  • Prepare and cook a variety of menu items, including regular and therapeutic diet entrees.
  • Perform roasting, broiling, baking, frying, grilling, boiling, steaming, and stewing meats.
  • Independently prepare soups, stocks, broths, gravies and sauces without the use of package mixes.
  • Clean and maintain equipment and work areas in sanitary conditions by sweeping and mopping floors; washing and sanitizing refrigerators, freezers, work surfaces, tables and utensils; and cleaning kettles, ranges, ovens, and other equipment.
  • Operate various mixers, steamers, steam kettles, ovens and other electrical and/or mechanical equipment.
  • Cook foods to proper temperatures and maintain proper food temperatures during holding, transport, re-heating, and serving to assure quality control and food safety.
