Riverside University Health System-Medical Center's (RUHS-MC) Food and Nutrition Services Department is seeking a qualified Cook with a Certified Food Handlers Card from Riverside County for it's Moreno Valley Location.

Riverside University Health System-Medical Center (RUHS-MC) Food and Nutrition Services Department is seeking a qualified Cook for its Moreno Valley location.

Candidates must possess a current Certified Food Handler Card from Riverside County or a Food Safety Manager Certificate.

This position may occasionally require travel to the Riverside location based on departmental needs.

The ideal candidate will have experience working in a kitchen environment and demonstrate strong knowledge of food preparation and safety standards.Under supervision, prepares, cooks, and serves food at a County operated facility; takes directions from superiors in the preparation, cooking, and serving of meals; and performs other related duties as required.

The Cook is the journey level classification in the Cook series and reports to a supervisory or manager level position.

Incumbents are required to perform the full-range of cooking assignments within prescribed procedures and may guide the work of others toward the efficient accomplishment of tasks, but are not responsible for a food service function.

Positions allocated to the Riverside University Health System-Medical Center (RUHS-MC) are assigned to the kitchen and work under the supervision of the Food and Nutrition Services Manager and/or Supervising Cook.

The Cook is distinguished from the Cooks Assistant by the former's responsibility to perform the full-range of large quantity cooking assignments.

This class is further distinguished from the Senior Cook in that the latter is the advanced journey level in the Cook series and provides lead direction to Cooks and Food Service Workers.


Schedule: This position has a primary schedule of 10:00 AM - 6:30 PM, but may be adjusted as needed within a 5:00 AM - 7:00 PM timeframe.

Requirements

• Prepare, cook and season soups, meats, fish, poultry, vegetables, desserts, baked goods, and other foods; follow master recipes in the preparation of food.

• Assist in ordering, receiving, checking, and storing foods and supplies.

• Guide the work of Food Service Workers assigned to the cooking area, in the cleaning of food preparation equipment and areas; may perform meat-cutting duties.

• Prepare routine records and reports when required; will be required to work various shifts when other cooks are not available.

Qualifications

OPTION I
Education: Graduation from high school or attainment of a satisfactory score on a G.E.D. test.

Experience: One year of large quantity cooking experience in an institutional, military, large commercial kitchen, or similar setting which has developed skills in measuring and mixing ingredients according to recipes and number of persons to be served.

OPTION II
Education: Graduation from high school or attainment of a satisfactory score on a G.E.D. test.

Experience: Two years in a position equivalent to a County of Riverside Food Service Worker.

OPTION III
Education: Graduation from high school or attainment of a satisfactory score on a G.E.D. test.

Experience: One year in food service work within a detention facility.

OPTION IV
Education: Graduation from high school or attainment of a satisfactory score on a G.E.D. test.

Experience: One year in a position equivalent to a County of Riverside Cook.

All Options

Knowledge of: The practices, methods, and equipment used in preparing and cooking food in large quantities from recipes; sanitation methods in cleaning and caring of equipment; storing and inventorying large quantities of food; common weights and measures; occupational hazards and safety precautions of kitchen areas and equipment.

Ability to: Prepare, cook, and coordinate cooking processes so that nutritional meals are prepared and served on time; read and understand recipes, labels, and instructions for food preparation; perform basic mathematical operations to determine the proportions of ingredients with a minimum of waste; follow oral and written directions; guide and provide concise instructions to Food Service Workers; cut, slice, and grind meat and poultry; maintain personal cleanliness and neatness; maintain effective working relationships with those encountered in the course of the position; prepare routine records and reports.

Other Requirements:

License/Certificate: Possession of a valid California Driver’s License may be required.
Possession of a valid Food Handler Card issued by the County of Riverside or Food Safety Manager Certification.

Physical Requirements: Must be able to lift up to 50 pounds unassisted with or without reasonable accommodation.
