This position is located in the Food/Beverage Department aboard NAS Pensacola, FL and is responsible for the administration, operation and maintenance to provide social and recreational facilities, entertainment programming and bar refreshments.
The purpose of this position is to provide direct supervision within the Food and Beverage Departments for Bar Operations at Portside Club Semi-official and private party functions are contracted annually.

Qualifying experience must have been equivalent to the next lower level in the normal line of progression.
Specialized experience must demonstrate the following: Knowledge of DOD component Food and Beverage procedures and general business practices related to the operational management of social and recreational programs and the effective utilization of club facilities and equipment.
Skills in developing directives, instructions, and procedures concerning the administration of social and recreational activities and utilization of the club resources; conducting surveys and audits to identify program deficiencies; determining the impact of changes to the services provided the patron community and repairs to the facilities and equipment, or other corrective measures; and coordinating the scheduling or implementing the work with other organizational activities.
Knowledge of DoD Component cost and funding control procedures and skill in the maintenance and control of expenditures to ensure limitations are observed.
Knowledge of social and recreational program planning requirements and skill in developing recommendations and justifications for major modifications to the club activities.
Knowledge of accounting procedures sufficient to follow individual funds from initiation through expenditure stages in order to trace discrepancies in the system.
Knowledge and understanding of the regulations and guides to interpret and apply them to a variety of accounting situations. Knowledge of integrated cost control procedures and financial systems.
Incumbent must have a knowledge of formal military protocol, courtesies and social amenities. You will receive credit for all qualifying experience, including volunteer and part time experience.
You must clearly identify the duties and responsibilities in each position held and the total number of hours per week.

Major Duties:
Plans, directs and supervises the activities of the entire Bar operation.
Duties encompass the hiring, training, communication and motivation of employees for quality Food and Beverage service to the guests.
Interface with the Food and Beverage Director in the planning of programs, menus and internal controls necessary for a viable and successful operation.
Responsible on a day-to-day basis for Food and Bar controls, reporting and managing operational costs. Incumbent is responsible for the proper relation of cost of goods to labor, waste and spoilage.
Develop and maintain stock control cards, par stock levels and daily inventories. Prepare marketing lists, determine food and beverage requirements and related supplies.
Develop and maintain standardized recipes on batch and item cost control cards with recommended selling prices. Inspects deliveries for quality and quantity.
Accountability of food and beverage equipment and supplies. Maintenance of sanitation and health inspection standards.
Keeps abreast of the technical advances in beverage equipment and preparation procedures for same. Plans, reviews, and prices the bar menus for approval by leadership.
Determines prices for special events using preapproved catering menus along with bar requirements and assures that arrangements are provided as needed.
On a continuing basis, checks methods of preparation, size of portions and appearance. Conducts bar inventories as required by local operating procedures.
Works within the guidelines of published SOP's, policies and Food & Beverage Standards.
Responsible for the training and direct supervision of subordinates and weekly scheduling and assignment of their duties. Evaluates performance and initiates required personnel actions.
Annually develops an income, expense and capital expenditure budget for the beverage operation. Performs market analysis and prepares statistical data relevant to budgetary operating costs.
Maintains compliance with the established Food and Beverage Standards, along with standard operating procedures, instructions and policies.
Maintains custody of all records, property, key, equipment and change funds assigned to prevent waste, theft and abuse.
